According to its owner and chef, Martin Cardenas, Viaggio focuses in capturing the spirit of Italian food, but with some little Peruvian touch, in order to satisfy the local gourmets. And despite respecting the European cuisine techniques, Cardenas always adds some of his personal creativity to each recipe. His menu covers some 50 dishes: probably 75% are Italian and 25% are Italian-Peruvian fusion. Some of the most remarkable entrees are the caneloni stuffed with zucchini, goat cheese and legumes; and our recommendations for a main course include the "zampone", a very traditional Italian recipe. The fusion dishes are also exceptional, like the ravioli stuffed with "seco de cordero" (lamb stew in coriander sauce), or the veggie lasagna, which includes the very Peruvian "zapallo loche" (a local variety of pumpkin). Options for dessert are also excellent, and don't miss the "tiramisu" nor the hand-made orange ice-cream. The drink of the house is the "Viaggio", but there are many pisco-based cocktails.
