If there as an award for awe-inspiring vistas, the Hyatt Highlands Inn would take home first place. This 11-acre property commands some of the most spectacular views of the Pacific on the Central Coast, and guests of the Highlands Inn have first row seats.This sprawling yet intimate boutique inn has been drawing in high-end clientele since it opened in1917. It only has 48 rooms, and each is essentially it's own private cottage. Many include a fireplace, kitchen area and double spa baths. A refreshing dip in the outdoor pool or at the several secluded spas sprinkled throughout the surrounding pines will rejuvenate the spirits before a complimentary mountain bike ride or pre-arranged horseback ride, kayak excursion or deep sea fishing adventure.
