With Blaue Gans, German for "blue goose," Austrian-American restaurateur Kurt Gutenbrunner has created a bistro that is modeled after the casual type of Austrian and German eatery known as the wirsthaus. Blaue Gans serves a menu of hearty Austrian fare, ranging from backhendl, or "Austrian fried chicken," to a selection of wursts (sausages) and schnitzels.
