Description:

The truth is, if you weren't looking for Vietnam Discovery, you'd be hard-pressed to find it. It's not in a location that's teeming with restaurants (yet), and this little corner of Independencia (not far from Recoleta) doesn't get many visitors.

Or at least that has historically been the case. Since Vietnam Discovery opened a few years ago, more and more people are wandering over to this part of the city to try their noodles and shrimp, their lemongrass fish and a number of other delicate and complex dishes that mix flavors not oven found here in Chile. At the same time, their French-inspired desserts are both unique in Chile and excellent.

Reservations are a must at this restaurant. It's small and intimate, dark and romantic, and highly sought-after, though it doesn't break the bank. At lunchtime there's a four-seater bench setup, or you can eat in the formal restaurant, and at dinner you'll spy many from Santiago's elite uptown who've decided to make the trek down to this part of Santiago for this culinary treat.
