Once one of the quintessential Saigon street foods, the humble banh xeo (translation: sizzling cake) has gone upmarket in recent times. Part of the responsibility for its slight gentrification lies with this venue which has morphed from a local favorite into one of the most famous dining venues in the whole city. It's not hard to see why the banh xeo has become such a hit with foreigners. Unlike some Vietnamese creations, there's no challenges or nasty surprises. Rice flour, water, turmeric powder (the source of the pancakes vibrant yellow coloring) and coconut milk are combined to make the batter, which is then stuffed with fatty pork, shrimps and beansprouts and pan fried. The crisp and decadent result is then served up alongside a veritable hedgerow of aromatic herbs and dipped in nuoc cham (fish sauce thinned with water and lemon). The result is one of the most addictive treats in the Vietnamese culinary armory and this is one of the best venues in which to get hooked.
