Humitas are steamed fresh corn-cakes cooked in corn husks. They are almost always eaten with ensalada chilena, a mix of peeled tomatoes and onion, sprinkled with lemon juice, olive oil and salt. They may look like tamales, but they’re made with fresh corn, so they taste quite different.
