Not only at the establishments specifically catering to vegans and vegetarians, but at the multitude of Asian eateries where you can find all-vegetable dishes. Thai, Mexican and some Middle Eastern dishes are also great for vegetarians. In short, Shanghai has something to offer the vegan and vegetarian where you'll stay healthy and happy while on vacation without compromising your morals.
The most famous place for vegetarian cuisine in Shanghai is the Gongdelin Vegetarian Restaurant. There are seemingly endless vegetable dishes to please the palate and keep you meat free.
